OPEN POSITION: FULL TIME ASSISTANT CHEF
L.May Eatery is actively seeking a full time assistant chef to start training immediately. We are an independently run upscale bistro in Dubuque, Iowa that offers dishes ranging from small plates/appetizers, gourmet pizzas, entrees (including house made pasta, locally sourced meats, and fresh seafood), and housemade desserts. Our menu includes a focus on current food trends including a wide variety of gluten free and some vegetarian/vegan offerings. We work closely with local producers and source ingredients locally whenever possible. Work with a culinary school trained chef to hone your skills and bring new creative ideas to the table in a fast-paced kitchen environment. The opportunity for creativity is apparent with seasonal menus that change often and nightly features.
Hours: Full Time, Thursday-Mondays (closed Tuesdays & Wednesdays) prep during the day, business hours from 4:30-9:30pm (no more super late nights!)
Pay: Commensurate upon experience, to be discussed at interview.

Assistant Chef duties include, but are not limited to:
- Responsibility for a kitchen station during business hours, station assignments rotate depending on the weekday, you will work saute, pizzas, salads/appetizers, and desserts throughout the week.
- Preparing meals and food to meet the specifications of guests in a timely manner.
- Properly measuring kitchen ingredients and food portions.
- Helping ensure kitchen staff adhere to set standards, procedures, department rules and sanitation requirements.
- Using kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation.
- Managing the kitchen inventory and ensuring supplies are fresh and of high quality.
- Manage local food supplier relationships/orders.
- Ensuring proper food temperatures when cooking and proper storage afterward.
- Keeping the workstation and kitchen equipment clean, organized and sanitized.
- Taking charge of kitchen opening, closing and other side duties as directed by the Executive Chef.
- Assistance with seasonal menu creation, daily features creation, and holiday menus creation (New Year’s & Valentines).
